Zoe Montalbano: Hi, I'm Zoe with metroseen, and we're going to check out what delicious treats are being made at Spruce Confections today. David Cohen: Hi, I'm David, and this is Spruce Confections. It's a bakery and cafe in downtown Boulder, CO. We make everything the hard way, with ingredients you'd have in your cabinets at home, and everything natural and everything from scratch. Spruce Confections is located at 8th and Pearl in downtown Boulder, where we have this beautiful, south-oriented flagstone patio where people like to bring their dogs and their kids and just hang out and have coffee and pastries.

Jill Grano: I love coming to Spruce Confections because it's in a wonderful section of town on West Pearl, it's absolutely beautiful and charming and they have the freshest scones and cookies, and I love their Bhakti Chai and coffee as well.

Daniel Partridge: Best scones in town. Best dog treats in town. Most dog-friendly place I've known in Boulder, and it's just a great place to come in the morning and read the paper and get a little breakfast and sit out and enjoy the weather.

David Cohen: I started the business with a cookie, and I call it the Old B Cookie. It's an oatmeal, chocolate chip, pecan, almond, walnut, coconut, cinnamon cookie. And, I started off just running cookies and truffles around town on my lunch break from a sandwich shop. I don't know there's just something about cookies that are just so essential to living.

Zoe Montalbano: Spruce also makes their own sandwiches from scratch every day. They roast all-natural meats, and make their own dressings. Their soups are also made fresh daily, and they taste fantastic!

David Cohen: One thing we're really famous for, in Boulder at least, is our scones. We make about 5 or 600 of them every day, and the scones started off really as an accident. One time I was making blueberry scones and I actually forgot the blueberries. And then, when I took the dough out of the mixer I didn't want to throw it out, so I just cut the dough in pieces and stuffed the blueberries in there and mushed it down, and that's where our signature scones were born.

Zoe Montalbano: Delicious!

Scott Jacobson: I come to Spruce, it's in my neighborhood. They make wonderful coffee and coffee drinks. All their pastries are really fantastic, the soups are great for lunch. their staff is really helpful, they recognize you, they know you, and they know what you want.

David Cohen: Our customer base is all locals, so we're downtown, but we're not quite downtown enough that it's a touristy kind of place. So, when the baristas are working in the morning, they can pretty much scan the line and they know the names and the drinks of everybody in line and it makes it a very, sort of familiar community hub downtown. That's the part I take the most pride in now, is being a place where people can meet each other and make Spruce Connections. (sorry :) )
